Revenue of Ukraine’s food service establishments increased by 5% despite a decline in visitor numbers

In the first half of 2025, Ukrainian food service establishments recorded a 5% increase in revenue compared to the same period in 2024. Lviv emerged as the leader in growth rates, with this figure reaching 7%.

Visitor Dynamics and Average Check

Despite the overall increase in revenue, the number of visitors to restaurants decreased by 9%. The most significant drop in traffic was observed in certain segments of the food service industry, ranging from 7% to 16%. Meanwhile, sushi establishments managed to maintain their visitor levels compared to last year.

A substantial increase in the average check was a key factor in the revenue growth. On average, visitors spent ₴171, which is 17% more than last year. Prices rose most noticeably in bars (by 19%, to ₴476) and coffee shops (by 18%, to ₴108). In cafes, the average check rose to ₴307 (+17%), in restaurants to ₴675 (+17%), in pizzerias to ₴324 (+16%), in bakeries to ₴82 (+14%), and in sushi establishments to ₴670 (+12%).

Reasons for Revenue Growth and Research Features

Analysts note that the increase in revenue is not due to higher demand, but primarily to rising prices for dishes and beverages.

“The increase in revenue is explained not by greater demand, but by rising prices: Ukrainians are paying more for the same dishes,” Poster states.

The research is based on the analysis of anonymized aggregated sales statistics from 8,800 food service establishments of various types across Ukraine.
